- Sugar1 tsp

Prepare the chili-salt paste: Finely mince bird's eye chilies and garlic. Finely mince the tender inner part of lemongrass stalks. Combine minced chilies, garlic, and lemongrass in a bowl.

Add fish sauce, sugar, salt, and black pepper to the chili-salt mixture. Stir well to combine.

Add the shrimp to the bowl with the marinade. Toss to coat evenly. Let marinate for at least 15-20 minutes.

Preheat your grill to medium-high heat. Lightly oil the grill grates.

Grill the marinated shrimp for 2-3 minutes per side, or until they turn pink and are cooked through. Avoid overcooking.

Remove shrimp from the grill. Squeeze fresh lime juice over the grilled shrimp. Garnish with fresh cilantro.
