- Roasted peanuts100g
- Garlic3 cloves
- Shallots2 shallots
- Fish sauce3 tbsp
- Sugar2 tbsp
- Water2 tbsp
- Vegetable oil3 tbsp
- Chili flakes (optional)1 tsp
- Scallions (for garnish)2 stalks
- Saltto taste
- Black pepperto taste

Clean and pat dry the anchovies. If using whole anchovies, remove heads and guts. For smaller ones, they can often be used whole.

Finely mince garlic and shallots.

In a small bowl, mix fish sauce, sugar, and 2 tbsp water to create the sauce. Stir until sugar dissolves.

Heat 3 tbsp vegetable oil in a wok or large skillet over medium-high heat. Fry the anchovies until golden brown and crispy. Remove anchovies from the wok and set aside, leaving the oil.

Add minced garlic and shallots to the same wok with the anchovy oil. Sauté until fragrant, about 1 minute.

Return the fried anchovies to the wok. Add the roasted peanuts and chili flakes (if using).

Pour the prepared fish sauce mixture over the anchovies and peanuts. Stir-fry quickly over medium-high heat until the sauce thickens and coats everything evenly, about 2-3 minutes.

Season with salt and black pepper to taste, if needed. Be mindful of the saltiness from the fish sauce.

Transfer to a serving dish. Garnish with chopped scallions.
