  • Fresh ginger1 inch piece
  • Fish sauce2 tbsp
  • Scallions2 stalks
  • Cilantro1 small bunch
  • Saltto taste
  • Black pepperto taste
  • Water1.5 liters

    Wash young pork ribs and cut into manageable pieces. Blanch ribs in boiling water for 2-3 minutes, then rinse and drain.

    Peel and deseed the pumpkin, then cut into large cubes (about 2-inch pieces).

    Peel and thinly slice or julienne the fresh ginger.

    In a pot, add the blanched pork ribs, sliced ginger, and 1.5 liters of water. Bring to a boil, then reduce heat and simmer for 40-45 minutes, or until the pork is tender.

    Add the pumpkin cubes to the pot. Continue to simmer for another 15-20 minutes, or until the pumpkin is soft and cooked through.

    Season the soup with fish sauce, salt, and black pepper to taste.
