- Salt1 tbsp
- Five-spice powder1 tsp
- Baking soda1/2 tsp
- Vinegar1 tbsp

Cut pork belly into desired serving pieces. Score the meat side.

Mix salt, five-spice powder, and baking soda. Rub this mixture onto the meat side of the pork belly.

Pat the skin dry. Brush with vinegar.

Preheat oven to 200°C (400°F). Place pork belly skin-side up on a baking sheet lined with foil.

Roast for 45-60 minutes, or until the skin is puffed up and crispy. If the skin isn't crackling enough, you can briefly broil it, watching very closely.
