- Fish sauce4 tbsp
- Sugar3 tbsp
- Garlic4 cloves, minced
- Shallots2, minced
- Black pepper1 tsp
- Water1/2 cup
- Vegetable oil2 tbsp
- Cilantrofor garnish
- Red chiliesfor garnish, sliced

Cut pork ribs into 2-inch pieces. Marinate with 2 tbsp fish sauce, 1 tbsp sugar, minced garlic, minced shallots, and black pepper for at least 30 minutes.

Heat vegetable oil in a pot or Dutch oven over medium-high heat. Sear the marinated pork ribs until browned on all sides.

Add the remaining 2 tbsp fish sauce, 2 tbsp sugar, and 1/2 cup water to the pot. Stir to combine.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes, or until the pork is tender and the sauce has thickened and caramelized.

Uncover the pot for the last 10 minutes of cooking to allow the sauce to reduce further and coat the ribs.
