- Fish sauce3 tbsp
- Sugar1 tbsp
- Black peppercorns1 tsp
- Garlic2 cloves
- Shallots1 small
- Vegetable oil1 tbsp
- Water1/2 cup
- Saltto taste
- Scallionsfor garnish

Cut pork ribs into 2-inch pieces. Marinate with 1 tbsp fish sauce, 1/2 tbsp sugar, and a pinch of salt.

Mince garlic and shallots.

Heat oil in a pot or clay pot over medium-high heat. Add minced garlic and shallots and sauté until fragrant.

Add the marinated pork ribs and sear until lightly browned on all sides.

Add the remaining fish sauce (2 tbsp), sugar (1/2 tbsp), and crushed black peppercorns. Stir well to coat the ribs.

Pour in water. Bring to a boil, then reduce heat to low, cover, and simmer for 40-50 minutes, or until the pork is tender and the sauce has thickened.

Adjust seasoning with salt if needed. Garnish with chopped scallions before serving.
