- Fish sauce4 tbsp
- Sugar3 tbsp
- Garlic4 cloves, minced
- Shallots2, minced
- Black pepper1 tsp
- Water500 ml
- Vegetable oil2 tbsp
- Cilantrofor garnish
- Chili peppersfor garnish

Marinate pork ribs with 2 tbsp fish sauce, minced garlic, minced shallots, and black pepper for at least 30 minutes.

In a pot, heat vegetable oil over medium-high heat. Add sugar and cook until it caramelizes to a deep amber color.

Carefully add the marinated pork ribs to the pot and stir-fry for a few minutes until lightly browned.

Add the remaining 2 tbsp fish sauce and water. Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the pork is tender.

While the pork is simmering, hard-boil the eggs. Peel them once cooled.

Add the peeled hard-boiled eggs to the pot with the pork during the last 15-20 minutes of simmering, allowing them to absorb the flavors.
