- Betel leaves (lá lốt)30-40 leaves
- Shallots, minced2 tbsp
- Garlic, minced1 tbsp
- Lemongrass, finely minced2 tbsp
- Fish sauce2 tbsp
- Sugar1 tsp
- Black pepper1/2 tsp
- Vegetable oil1 tbsp
- Salt1/2 tsp
- Water1/4 cup

In a bowl, combine ground beef, minced shallots, garlic, lemongrass, fish sauce, sugar, salt, and black pepper. Mix well until thoroughly combined.

Wash and pat dry the betel leaves. Remove the tough central stem if desired.

Place a spoonful of the beef mixture onto the shiny side of each betel leaf. Fold the leaf over the filling, tucking in the sides to form a neat parcel. Repeat with remaining mixture and leaves.

Heat vegetable oil in a non-stick pan or on a grill over medium-high heat. Grill the wrapped parcels for about 3-5 minutes per side, or until the beef is cooked through and the leaves are slightly charred and fragrant.

Serve immediately with fresh herbs (mint, cilantro, basil), rice vermicelli noodles, and Nuoc Cham dipping sauce.
