- Rock sugar1 tbsp

- Tofu1 block

Prepare the goat meat: Cut into bite-sized pieces. Marinate with salt, pepper, and a little fish sauce.

Prepare aromatics: Bruise lemongrass stalks and cut into sections. Peel and slice ginger. Peel and smash garlic cloves. Peel and slice shallots.

Sear the goat meat: In a large pot, sear the goat meat until browned on all sides. Remove and set aside.

Sauté aromatics: In the same pot, add a little oil and sauté lemongrass, ginger, garlic, and shallots until fragrant.

Build the broth: Add star anise, cinnamon stick, turmeric powder, chili peppers, and the seared goat meat back to the pot. Pour in water.

Simmer the broth: Bring to a boil, then reduce heat and simmer for at least 60 minutes, or until the goat meat is tender. Skim off any impurities.

Season the broth: Add fish sauce and rock sugar to taste. Adjust seasoning with salt and pepper.

Prepare accompaniments: Arrange fresh vegetables, herbs, and tofu on platters. Prepare rice vermicelli noodles according to package instructions.

Serve: Place the hot pot with the simmering broth on a portable burner at the table. Guests cook their own ingredients in the broth and enjoy with noodles and dipping sauces.
