- Boneless, skinless chicken thighs700g
- Mak kheng (Sichuan pepper)1 tbsp
- Lemongrass paste2 tbsp
- Garlic powder1 tsp
- Chili flakes1 tsp
- Fish sauce2 tbsp
- Soy sauce1 tbsp
- Brown sugar1 tsp
- Vegetable oil1 tbsp
- Salt1/2 tsp
- Black pepper1/4 tsp

If using whole mak kheng, toast and grind them. If using pre-ground, skip to the next step.

Cut chicken thighs into 1.5-inch cubes.

In a bowl, combine ground mak kheng (or powder), lemongrass paste, garlic powder, chili flakes, fish sauce, soy sauce, brown sugar, vegetable oil, salt, and black pepper. Mix well.

Add chicken cubes to the marinade and toss to coat. Let marinate for at least 15 minutes.

Soak wooden skewers in water for 15 minutes to prevent burning.

Thread marinated chicken onto the soaked skewers.

Preheat grill to medium-high heat.

Grill skewers for 10-15 minutes, turning regularly, until chicken is cooked through and slightly charred.
