  • Mắm nhĩ (fermented fish sauce)100 ml
  • Garlic4 cloves
  • Shallots2 medium
  • Fresh chili peppers2-3
  • Sugar1 tbsp
  • Black pepper1 tsp
  • Water50 ml
  • Cilantrofor garnish

    Prepare the marinade: Mince garlic and shallots. Finely chop chilies. In a bowl, combine mắm nhĩ, minced garlic, shallots, chopped chilies, sugar, black pepper, and water. Mix well.

    Clean the gà tre thoroughly. Pat dry.

    Marinate the chicken: Place the chicken in a large bowl or resealable bag. Pour the marinade over the chicken, ensuring it is evenly coated. Marinate for at least 30 minutes, or preferably 1-2 hours in the refrigerator.

    Prepare for steaming: Place the marinated chicken in a steamer basket or a heatproof dish that fits inside your steamer. You can add some of the marinade liquid to the bottom of the dish.

    Steam the chicken: Steam over high heat for 40-50 minutes, or until the chicken is cooked through and tender. The internal temperature should reach 74°C (165°F).

    Rest and serve: Let the chicken rest for 5-10 minutes before carving. Garnish with fresh cilantro and sliced chilies. Serve hot.
