- Large shrimp, peeled and deveined1 lb
- Garlic, minced3 cloves
- Shallots, minced1 small
- Fish sauce3 tbsp
- Sugar2 tbsp
- Water2 tbsp
- Black pepper1 tsp
- Vegetable oil2 tbsp
- Green onions, chopped (for garnish)2 stalks
- Cilantro, fresh (for garnish)a few sprigs

In a small bowl, whisk together fish sauce, sugar, and 1 tbsp of water until sugar is dissolved. Set aside.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and shallots and stir-fry until fragrant, about 30 seconds.

Add the shrimp to the wok and stir-fry until they turn pink and opaque, about 2-3 minutes.

Pour the prepared fish sauce mixture over the shrimp. Stir well to coat. Continue to cook, stirring frequently, until the sauce thickens and caramelizes, coating the shrimp, about 3-5 minutes.

Season with black pepper. Stir in the remaining 1 tbsp of water if the sauce becomes too thick.

Remove from heat. Garnish with chopped green onions and cilantro. Serve immediately.
