- Tamarind paste1/2 cup

- Shallots2, minced
- Fish sauce2 tablespoons
- Sugar2 tablespoons
- Chili peppers2, sliced (optional)
- Vegetable oil3 tablespoons
- Saltto taste
- Black pepperto taste
- Water1/4 cup
- Cilantrofor garnish

Clean and cut the crabs into serving pieces. Season lightly with salt and pepper.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and shallots, stir-fry until fragrant.

Add the crab pieces and stir-fry until they turn bright red and are partially cooked, about 5-7 minutes.

In a small bowl, whisk together tamarind paste, fish sauce, sugar, and water to form the sauce.

Pour the tamarind sauce over the crabs. Add sliced chili peppers if using. Stir well to coat the crabs evenly.

Continue to cook, stirring occasionally, until the sauce thickens and coats the crabs, about 5-10 minutes.
