  • Sugar1 tablespoon
  • Fish sauce1 tablespoon
  • Water1/2 cup
  • Cornstarch1 tablespoon, mixed with 2 tablespoons water
  • Vegetable oil3 tablespoons
  • Scallions3, cut into 2-inch pieces
  • Cilantrofor garnish
  • Red chilies1, sliced (optional, for garnish)

    Clean the crabs thoroughly. If using whole crabs, crack them into manageable pieces. You can steam or boil the crab pieces for about 5-7 minutes until they are partially cooked.

    In a small bowl, whisk together oyster sauce, soy sauce, sugar, fish sauce, and 1/2 cup water. Set aside.

    Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic, shallots, and ginger. Stir-fry until fragrant, about 1 minute.

    Add the coarsely ground black peppercorns and stir-fry for another 30 seconds until aromatic.

    Add the partially cooked crab pieces to the wok. Stir-fry for 2-3 minutes to coat them with the aromatics and pepper.

    Pour the prepared sauce mixture into the wok. Bring to a simmer.
