- Unsalted butter1 cup
- Garlic, minced10 cloves
- Shallots, minced2
- Fish sauce2 tablespoons
- Sugar1 tablespoon
- Water1/4 cup
- Green onions, chopped1/2 cup

Clean the crabs thoroughly. Crack the shells into manageable pieces.

Melt butter in a large wok or skillet over medium-high heat. Add minced garlic and shallots and sauté until fragrant, about 1-2 minutes.

Add the crab pieces to the wok. Stir-fry for 5-7 minutes until the crab turns bright red and is almost cooked through.

In a small bowl, whisk together fish sauce, sugar, and water. Pour this mixture over the crabs.

Continue to cook, tossing the crabs to coat them evenly with the sauce, until the sauce thickens and the crab is fully cooked, about 5-8 more minutes.

Season with salt and black pepper to taste. Stir in most of the chopped green onions.
