- Mud crab2 medium
- Tamarind paste3 tbsp
- Garlic4 cloves, minced
- Shallots1, minced
- Fish sauce2 tbsp
- Sugar1 tbsp
- Chili1-2, sliced (optional)
- Vegetable oil2 tbsp
- Water1/4 cup
- Saltto taste
- Black pepperto taste
- Cilantrofor garnish

Clean and cut the mud crabs into serving pieces. Season lightly with salt and pepper.

In a small bowl, mix tamarind paste with 1/4 cup of warm water. Strain to remove seeds and pulp.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and shallots and stir-fry until fragrant.

Add the crab pieces to the wok and stir-fry for 2-3 minutes until they start to turn red.

Pour in the tamarind mixture, fish sauce, sugar, and sliced chili (if using). Stir well to coat the crab.

Cover the wok and simmer for 5-7 minutes, or until the crab is fully cooked and the sauce has thickened.

Adjust seasoning with salt and pepper if needed. Stir to ensure the crab is evenly coated.
