- Firm tofu400g
- Ground pork150g
- Shrimp paste1 tsp
- Tomatoes300g
- Shallots2 tbsp, minced
- Garlic1 tbsp, minced
- Fish sauce1.5 tbsp
- Sugar1 tsp
- Chili pepper1/2, finely chopped (optional)
- Vegetable oil2 tbsp
- Scallions2 stalks, chopped
- Saltto taste
- Black pepperto taste
- Water1/2 cup

Cut tofu into 2-inch cubes. Carefully cut a pocket into each cube.

In a bowl, mix ground pork with shrimp paste, minced shallots, garlic, 1 tbsp fish sauce, sugar, salt, pepper, and optional chili. Mix well.

Stuff the pork mixture into the tofu pockets.

Heat vegetable oil in a pan over medium-high heat. Pan-fry the stuffed tofu until golden brown on all sides. Remove and set aside.

Puree or finely chop the tomatoes. Sauté the remaining minced shallots and garlic in the same pan until fragrant.

Add the tomatoes to the pan and cook until they break down. Stir in the remaining fish sauce, sugar, salt, pepper, and optional chili.

Return the fried tofu to the pan. Add water, bring to a simmer, cover, and cook for 15-20 minutes.

Garnish with chopped scallions before serving.
