- Firm tofu500g
- Shallots2
- Garlic3 cloves
- Fish sauce3 tbsp
- Soy sauce1 tbsp
- Sugar1 tsp
- Ground black pepper1.5 tsp
- Whole black peppercorns1 tsp
- Water1/2 cup
- Vegetable oil2 tbsp
- Scallions2 stalks

Cut the firm tofu into 1-inch cubes. Pat them dry.

Finely mince the shallots and garlic.

Heat vegetable oil in a pot or clay pot over medium-high heat. Fry the tofu cubes until golden brown on all sides. Remove and set aside.

In the same pot, sauté the minced shallots and garlic until fragrant.

Add fish sauce, soy sauce, sugar, ground black pepper, and whole black peppercorns. Stir well.

Pour in the water and bring the sauce to a simmer.

Gently return the fried tofu to the pot. Ensure the tofu is mostly submerged in the sauce.

Cover and simmer over low heat for 20-25 minutes, or until the sauce has thickened and the tofu has absorbed the flavors. Stir occasionally.
