Nguyên liệu

  • Korean cucumbers (oi)4 large
  • Salt1/4 cup
  • Water1 cup
  • Gochugaru (Korean chili flakes)3 tablespoons
  • Fish sauce2 tablespoons
  • Minced garlic1 tablespoon
  • Minced ginger1 teaspoon
  • Sugar1 teaspoon
  • Rice vinegar1 tablespoon
  • Scallions, chopped2
  • Toasted sesame seeds1 teaspoon

Các bước

  1. 1

Wash cucumbers thoroughly. Cut them into bite-sized pieces (about 1-inch thick rounds or half-moons).

  2. 2

In a large bowl, dissolve salt in water. Add the cucumber pieces and let them sit for 15-20 minutes to draw out moisture and slightly soften.

  3. 3

Drain the cucumbers and rinse them under cold water. Squeeze out excess water gently.

  4. 4

In a separate bowl, combine gochugaru, fish sauce, minced garlic, minced ginger, sugar, and rice vinegar. Mix well to form a paste.

  5. 5

Add the drained cucumbers and chopped scallions to the paste. Toss gently to coat evenly.

  6. 6

    Stir in toasted sesame seeds.

  7. 7

Serve immediately as a side dish or chill for later.
