- Salt1/4 cup
- Water1 cup
- Gochugaru (Korean chili flakes)3 tablespoons
- Fish sauce2 tablespoons
- Minced garlic1 tablespoon
- Minced ginger1 teaspoon
- Sugar1 teaspoon
- Rice vinegar1 tablespoon
- Scallions, chopped2
- Toasted sesame seeds1 teaspoon

Wash cucumbers thoroughly. Cut them into bite-sized pieces (about 1-inch thick rounds or half-moons).

In a large bowl, dissolve salt in water. Add the cucumber pieces and let them sit for 15-20 minutes to draw out moisture and slightly soften.

Drain the cucumbers and rinse them under cold water. Squeeze out excess water gently.

In a separate bowl, combine gochugaru, fish sauce, minced garlic, minced ginger, sugar, and rice vinegar. Mix well to form a paste.

Add the drained cucumbers and chopped scallions to the paste. Toss gently to coat evenly.
