  • Fruit juice or concentrate (e.g., apple, grape, berry)120ml
  • Corn syrup or glucose syrup30g

    Combine sugar, corn syrup, and remaining 40ml water in a saucepan. Heat and stir until sugar dissolves. Boil until it reaches 105°C (221°F).

    Remove from heat and stir in the bloomed gelatin until dissolved.

    Whisk in the fruit juice or concentrate until smooth.

    Pour into a parchment-lined pan and let set for at least 3 hours until firm.
