  • Turmeric powder1 tsp
  • Shallots2
  • Garlic3 cloves
  • Ginger1 inch piece
  • Shrimp paste (mắm ruốc)1 tbsp
  • Annatto seeds1 tbsp
  • Seafood broth (or fish stock)800ml
  • Chicken broth200ml
  • Peanuts, roasted and crushed50g
  • Crispy rice crackers4
  • Fresh herbs (mint, cilantro)1 bunch
  • Lime wedges1
  • Chili, sliced1
  • Vegetable oil2 tbsp
  • Saltto taste
  • Black pepperto taste

    Marinate frog legs with salt, pepper, and half of the minced shallots and garlic.

    Sauté annatto seeds in oil, remove seeds. Add remaining shallots and garlic, sauté until fragrant.

    Add marinated frog legs and sear until lightly browned. Stir in shrimp paste and turmeric powder.

    Add ginger, seafood broth, and chicken broth. Bring to a simmer and cook for 15-20 minutes until frog meat is tender.

    Add shrimp during the last 3-5 minutes of cooking until just pink and cooked through.

    Prepare Mì Quảng noodles according to package instructions. Drain well.

    Serve noodles in bowls, topped with frog, shrimp, and broth. Garnish with crushed peanuts, fresh herbs, crispy crackers, chili, and a lime wedge.
