- Broken rice (Gạo Tấm)4 cups
- Pork chops4 pieces
- Pork skin200g
- Ground pork300g
- Eggs4 large
- Wood ear mushrooms20g
- Glass noodles20g
- Shallots2, minced
- Garlic3 cloves, minced
- Fish sauce4 tbsp
- Sugar2 tbsp
- Black pepper1 tsp
- Salt1 tsp
- Vegetable oil2 tbsp
- Toasted rice powder (Thính)3 tbsp
- Cucumber1, sliced
- Tomatoes2, sliced
- Pickled carrots and daikon1/2 cup
- Nuoc cham (dipping sauce)for serving

Prepare the Chả: Soak wood ear mushrooms and glass noodles. Mince shallots and garlic. In a bowl, combine ground pork, minced shallots, garlic, soaked and chopped mushrooms and noodles, 2 eggs, 2 tbsp fish sauce, 1 tsp sugar, 1/2 tsp black pepper, and 1/2 tsp salt. Mix well. Steam in a greased mold or pan until firm (about 30-40 minutes). Let cool and slice.

Prepare the Bì: Boil pork skin until tender. Drain and slice thinly. Toss with 3 tbsp toasted rice powder, 1 tbsp fish sauce, and 1/2 tsp salt. Mix well.

Marinate the Pork Chops: Mix 2 tbsp fish sauce, 1 tbsp sugar, 1/2 tsp black pepper, minced garlic, and 1 tbsp vegetable oil. Marinate pork chops for at least 30 minutes.

Cook the Broken Rice: Rinse broken rice. Cook with water in a rice cooker or pot according to rice cooker instructions (usually a 1:1.5 or 1:2 rice to water ratio).

Grill the Pork Chops: Grill marinated pork chops until cooked through and nicely charred.

Assemble the Dish: Serve a generous portion of broken rice. Top with a grilled pork chop, a portion of bì, and a slice of chả. Garnish with fresh cucumber, tomato slices, and pickled carrots/daikon. Serve with nuoc cham.
