  • Fresh pineapple1 cup, diced
  • Cashews1/2 cup, toasted
  • Eggs2
  • Garlic2 cloves, minced
  • Onion1/2, diced
  • Peas1/2 cup
  • Cilantro1/4 cup, chopped
  • Fish sauce1.5 tablespoons
  • Lime juice1 tablespoon
  • Vegetable oil2 tablespoons
  • Saltto taste
  • Black pepperto taste

    Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add diced Vietnamese sausage and cook until lightly browned. Remove and set aside.

    Add the remaining 1 tablespoon of oil. Add minced garlic and diced onion, stir-fry until fragrant.

    Push aromatics to the side. Add eggs and scramble until cooked. Break up the eggs.

    Add the cooked rice, diced pineapple, and peas to the wok. Stir-fry for 4-5 minutes until heated through and pineapple is slightly softened.

    Return the cooked sausage to the wok. Add fish sauce and lime juice. Stir to combine.
