- Pork shoulder400g
- Yellow onion2 large
- Fresh ginger1 inch piece
- Garlic2 cloves
- Fish sauce2 tbsp
- Soy sauce1 tbsp
- Brown sugar1 tbsp
- Vegetable oil3 tbsp
- Black pepper1/2 tsp
- Salt1/4 tsp
- Water2 tbsp
- Cilantrofor garnish

Slice pork shoulder thinly against the grain. Mince garlic and grate or finely mince ginger.

Slice onions into thick half-moons.

In a small bowl, whisk together fish sauce, soy sauce, brown sugar, black pepper, salt, and water.

Heat 1 tbsp of oil in a wok or large skillet over medium-low heat. Add the sliced onions. Cook slowly, stirring occasionally, for 15-20 minutes until deeply caramelized and sweet. Remove onions from wok and set aside.

Add the remaining 2 tbsp of oil to the wok over medium-high heat. Add minced garlic and ginger, stir-fry until fragrant (about 30 seconds).

Add the sliced pork. Stir-fry until browned and cooked through (about 3-4 minutes).

Return the caramelized onions to the wok. Pour the sauce mixture over the pork and onions. Stir well to combine and cook for 1-2 minutes until the sauce thickens slightly.

Remove from heat. Garnish with fresh cilantro. Serve hot.
