- Fish sauce2 tbsp
- Sugar1 tsp
- Ground cinnamon1 tsp
- Black pepper1/2 tsp
- Garlic, minced2 cloves
- Shallots, minced1 tbsp
- Baking soda1/2 tsp
- Vegetable oil1 tbsp
- Water2 tbsp

In a large bowl, combine ground pork, fish sauce, sugar, ground cinnamon, black pepper, minced garlic, minced shallots, baking soda, and vegetable oil. Mix well until all ingredients are evenly distributed.

Gradually add 2 tbsp of water while mixing vigorously to help the mixture become sticky and emulsified.

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Shape the mixture into logs or patties. For logs, wrap tightly in plastic wrap or banana leaves (if available) and steam for 20-25 minutes until cooked through. Alternatively, form into patties.

Once steamed or formed into patties, let them cool slightly. For the classic Chả Quế, grill or pan-fry the logs/patties until golden brown and slightly charred on all sides.

Slice the Chả Quế and serve hot, often with nuoc cham (Vietnamese dipping sauce) and fresh herbs.
