- Chicken thighs, bone-in, skin-on1.5 kg
- Fresh lima beans (or frozen)300 g
- Ginger, minced2 tbsp
- Garlic, minced2 tbsp
- Fish sauce4 tbsp
- Sugar2 tbsp
- Black pepper1 tsp
- Water200 ml
- Caramel sauce (nuoc mau) or dark soy sauce1 tbsp
- Vegetable oil2 tbsp
- Fresh chili, sliced (optional)1
- Cilantro, for garnishsmall bunch

Cut chicken into large pieces. If using fresh lima beans, blanch and peel. If frozen, thaw.

In a bowl, marinate chicken with minced ginger, garlic, fish sauce, sugar, salt, black pepper, and caramel sauce (or dark soy sauce) for at least 30 minutes.

Heat vegetable oil in a heavy-bottomed pot or clay pot over medium-high heat. Sear chicken pieces until browned.

Add the marinated chicken and any remaining marinade to the pot. Pour in water.

Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes, stirring occasionally, until chicken is tender and sauce has reduced and thickened.

Add the lima beans during the last 15 minutes of cooking. Stir gently to combine.
