A traditional Korean glass noodle stir-fry with a variety of colorful vegetables and tender beef, seasoned with soy sauce and sesame oil.

- Korean sweet potato starch noodles (dangmyeon)200g
- Beef sirloin or tenderloin150g
- Spinach100g
- Carrots100g
- Yellow onion100g
- Shiitake mushrooms50g
- Garlic2 cloves
- Soy sauce4 tbsp
- Sesame oil3 tbsp
- Sugar1 tbsp
- Toasted sesame seeds1 tbsp
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste

Cook the sweet potato noodles according to package directions until tender but still chewy. Drain, rinse with cold water, and cut into shorter lengths with scissors. Toss with 1 tbsp sesame oil and a pinch of salt.

Marinate the thinly sliced beef with 1 tbsp soy sauce, 1 tsp sesame oil, and a pinch of black pepper.

Blanch the spinach in boiling water for 30 seconds, then rinse with cold water. Squeeze out excess water and season with a pinch of salt and 1 tsp sesame oil.

Julienne the carrots and yellow onion. Slice the shiitake mushrooms thinly.

Stir-fry the marinated beef in 1 tbsp vegetable oil until cooked through. Remove from the pan.

Stir-fry the julienned onions and carrots in the same pan with 1 tbsp vegetable oil until slightly softened. Add the sliced shiitake mushrooms and minced garlic, stir-fry for another minute.

In a small bowl, whisk together the remaining soy sauce, sugar, and remaining sesame oil.

Add the cooked noodles, stir-fried beef, blanched spinach, and the soy sauce mixture to the pan with the vegetables. Toss everything together gently over medium heat until well combined and heated through.

Serve immediately, garnished with toasted sesame seeds.
