- Korean sweet potato starch noodles (dangmyeon)200g

- Squid, cleaned and cut into rings100g

- Yellow onion75g

- Soy sauce3 tbsp
- Oyster sauce1 tbsp

- Sugar1 tsp
- Toasted sesame seeds1 tbsp

Cook the sweet potato noodles according to package directions. Drain, rinse with cold water, and cut into shorter lengths. Toss with 1 tbsp sesame oil and a pinch of salt.

Julienne carrots, zucchini, and yellow onion. Slice shiitake mushrooms. Mince garlic.

Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and squid, stir-fry until just cooked through. Remove from the pan.

Add the remaining 1 tbsp vegetable oil to the pan. Stir-fry onions until softened, then add carrots, zucchini, and shiitake mushrooms. Cook until tender-crisp.

Add minced garlic and stir-fry for 30 seconds until fragrant.

In a small bowl, whisk together soy sauce, oyster sauce, sugar, and remaining sesame oil.

Return the cooked seafood to the pan. Add the cooked noodles and the sauce mixture. Toss everything together gently over medium heat until well combined and heated through.

Season with salt and pepper to taste. Garnish with toasted sesame seeds and serve.
