Classic Vietnamese fresh spring rolls, also known as Gỏi Cuốn. These are healthy, light, and refreshing rolls filled with cooked shrimp, pork, vermicelli noodles, fresh herbs, and crisp vegetables, all wrapped in delicate rice paper. Served with a peanut dipping sauce.

  • Pork belly200g
  • Medium shrimp200g
  • Rice vermicelli noodles100g
  • Fresh mint leaves1 cup
  • Fresh cilantro sprigs1 cup
  • Lettuce leaves12 leaves
  • Bean sprouts1 cup
  • Garlic2 cloves
  • Hoisin sauce1/4 cup
  • Peanut butter1/4 cup
  • Water2 tbsp
  • Saltto taste
  • Black pepperto taste

    Boil pork belly until cooked through, then slice thinly. Peel and devein shrimp, then boil until pink and cooked. Cook vermicelli noodles according to package directions.

    Prepare the dipping sauce: In a small saucepan, combine hoisin sauce, peanut butter, minced garlic, and water. Simmer gently until smooth and slightly thickened. Season with salt and pepper.

    Prepare a bowl of warm water for softening the rice paper wrappers.

    Dip one rice paper wrapper in warm water for about 15-30 seconds until pliable.

    Place the softened wrapper on a clean, damp surface. Layer lettuce, herbs, a few slices of pork, a few shrimp, and a small portion of vermicelli noodles near the bottom edge.

    Fold the bottom edge of the wrapper over the filling, then fold in the sides, and tightly roll up the spring roll.

    Repeat with remaining ingredients. Serve immediately with the peanut dipping sauce.
