In a large pot, combine wheat flour and corn flour. Gradually whisk in 1 liter of cold water until smooth.

Bring the mixture to a boil over medium heat, stirring constantly until it thickens into a porridge-like consistency. Cook for 5-10 minutes.

Remove from heat and let it cool completely. This is crucial for the fermentation process.

Once cooled, dissolve the yeast in a small amount of lukewarm water with a pinch of sugar. Let it sit for 5-10 minutes until foamy.

Add the activated yeast mixture and the remaining 1 liter of water to the cooled porridge. Stir well to combine.

Pour the mixture into a clean fermentation vessel (like a large glass jar or ceramic pot). Cover loosely with a lid or cheesecloth.

Let it ferment at room temperature for 24-48 hours. The duration depends on the ambient temperature and desired sourness. Stir occasionally.

Once fermented, stir in the sugar and salt. Taste and adjust sweetness if needed.

Strain the boza through a fine-mesh sieve if a smoother consistency is desired.

Chill thoroughly before serving. Serve cold, garnished with cinnamon and roasted pumpkin seeds.
