- Dried white beans200g

- Carrots2 medium

- Garlic3 cloves
- Tomato paste2 tbsp
- Paprika1 tbsp
- Savory (Chubritsa)1 tsp
- Bay leaf1
- Vegetable oil3 tbsp

Soak the white beans overnight, then drain and rinse.

Cut the pork shoulder into bite-sized cubes.

Chop the onions, carrots, and red bell pepper. Mince the garlic.

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the pork cubes on all sides. Remove pork and set aside.

Add the chopped onions to the pot and sauté until softened, about 5-7 minutes.

Add the carrots and bell pepper, cook for another 5 minutes.

Stir in the minced garlic and tomato paste, cook for 1 minute until fragrant.

Return the pork to the pot. Add the soaked beans, paprika, savory, and bay leaf.

Pour in enough water to cover all ingredients. Bring to a boil, then reduce heat to low, cover, and simmer for at least 2-3 hours, or until pork and beans are very tender. Add more water if needed to maintain a stew consistency.

Season with salt and black pepper to taste. Remove the bay leaf before serving.
