
Traditional Pork with Prunes (Свинско със сини сливи)

- Pork shoulder800g
- Dried prunes200g
- Onions2 large
- Garlic3 cloves
- Red wine150ml
- Pork broth or water300ml
- Tomato paste2 tbsp
- Bay leaf1
- Allspice berries3-4
- Black peppercorns5-6
- Saltto taste
- Black pepperto taste
- Vegetable oil2 tbsp

Soak dried prunes in warm water for at least 30 minutes. Drain and pit if necessary.

Cut pork shoulder into 3-4 cm cubes. Season generously with salt and black pepper.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Sear pork cubes on all sides until browned. Remove pork and set aside.

Chop onions and mince garlic. Add onions to the pot and sauté until softened and lightly golden, about 5-7 minutes.

Stir in tomato paste and cook for 1 minute until fragrant.

Deglaze the pot with red wine, scraping up any browned bits from the bottom.

Return the pork to the pot. Add pork broth (or water), bay leaf, allspice berries, and black peppercorns. Bring to a simmer.

Cover the pot, reduce heat to low, and simmer for 1.5 to 2 hours, or until the pork is very tender.

Add the soaked prunes to the pot during the last 30 minutes of cooking.

Remove bay leaf and allspice berries before serving. Adjust seasoning with salt and pepper if needed. Serve hot.
