A traditional Chinese chili oil infused with aromatics and packed with crispy chili flakes and other crunchy bits. Perfect for dipping, drizzling, or as a condiment.

- Neutral oil (e.g., canola, vegetable)2 cups
- Dried red chilies (e.g., Sichuan, Korean)1 cup
- Sichuan peppercorns2 tablespoons
- Star anise3 pieces
- Cinnamon stick1 small piece
- Bay leaf1 piece
- Garlic, thinly sliced4 cloves
- Shallots, thinly sliced1/4 cup
- Salt1 teaspoon
- Sugar1 teaspoon

Grind about half of the dried chilies into a coarse powder. Keep the other half whole or roughly chopped.

Combine the chili powder and whole chilies in a heatproof bowl.

In a saucepan, heat the neutral oil over medium-low heat. Add Sichuan peppercorns, star anise, cinnamon stick, and bay leaf. Infuse the oil for about 10-15 minutes, until fragrant, being careful not to burn the spices.

Strain the oil to remove the whole spices, reserving the infused oil. Discard the spices.

Increase the heat to medium. Add the sliced garlic and shallots to the infused oil. Fry until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Reserve the crispy bits.

Let the oil cool slightly for about 5 minutes. Then, carefully and slowly pour the hot oil over the chili powder and whole chilies in the bowl. It will sizzle vigorously.

Stir in the salt and sugar. Add the reserved crispy garlic and shallots to the oil.

Let the chili oil cool completely, then transfer to an airtight container. It will continue to infuse and develop flavor.

Store in the refrigerator for longer shelf life.
