- Beef chuck roast1 kg
- Onions2 large
- Carrots3 medium
- Potatoes4 medium
- Garlic4 cloves
- Beef broth750 ml
- Tomato paste2 tbsp
- All-purpose flour3 tbsp
- Vegetable oil2 tbsp
- Bay leaf2
- Thyme1 tsp dried
- Saltto taste
- Black pepperto taste

Cut beef into 2-inch cubes. Season generously with salt and pepper.

Heat oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches, then set aside.

Add chopped onions to the pot and cook until softened, about 5-7 minutes.

Stir in minced garlic and tomato paste, cook for 1 minute until fragrant.

Sprinkle flour over the onions and stir to coat. Cook for 1-2 minutes.

Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pot.

Return beef to the pot. Add bay leaves and thyme. Bring to a simmer.

Cover, reduce heat to low, and simmer for 1.5 to 2 hours, or until beef is tender.

Add cubed carrots and potatoes. Add water if needed to cover.

Continue simmering, covered, for another 30-45 minutes, or until vegetables are tender.

Remove bay leaves. Season with salt and pepper to taste. Serve hot.
