- Lamb leg, boneless, cut into cubes500g
- Potatoes, cut into small cubes500g
- Onion, chopped1 large
- Garlic, minced2 cloves
- Bell pepper (optional)1/2, chopped
- Vegetable oil2 tbsp
- Dried oregano1 tsp
- Saltto taste
- Black pepperto taste

Heat vegetable oil in a large skillet over medium-high heat.

Add lamb cubes and brown on all sides. Remove lamb from skillet and set aside.

Add potato cubes to the skillet and cook, stirring occasionally, until golden brown and tender, about 15-20 minutes. You may need to add a little more oil.

Add chopped onion and bell pepper (if using) to the skillet with the potatoes. Cook until softened, about 5 minutes.

Add minced garlic and dried oregano, cook for 1 minute until fragrant.

Return the lamb to the skillet. Season with salt and black pepper. Stir to combine and heat through for about 5 minutes.

Serve directly from the skillet.
