A classic Bulgarian Mlechna Banitsa, a sweet cheese and milk pie made with thin phyllo dough, filled with a creamy mixture of sirene cheese, eggs, milk, and yogurt, then baked until golden and slightly crisp.

- sirene cheese (Bulgarian white brine cheese)500g
- eggs4 large
- milk500ml
- plain yogurt200g
- butter, melted100g
- sugar2 tablespoons
- vanilla extract1 teaspoon
- salt1/4 teaspoon

Preheat oven to 180°C (350°F). Grease a baking dish.

Crumble the sirene cheese into a large bowl. Add the eggs, milk, yogurt, sugar, vanilla extract, and salt. Whisk until well combined and relatively smooth.

Lay one sheet of phyllo dough in the prepared baking dish, brushing it lightly with melted butter. Repeat with the remaining phyllo sheets, layering and buttering each one.

Pour the cheese and milk mixture evenly over the layered phyllo dough.

Bake for 40-50 minutes, or until the banitsa is golden brown and puffed up.

Let it cool slightly before cutting into squares or diamonds and serving.
