A simplified, faster version of Drob Sarma cooked entirely in a skillet. It uses pre-cooked offal or a mix of ground lamb and liver for speed, combined with rice and aromatic vegetables.

- Pre-cooked lamb liver400g
- Onion1 large
- Garlic cloves2
- Red bell pepper1/2
- Rice (short-grain)150g
- Vegetable broth300ml
- Olive oil30ml
- Saltto taste
- Black pepperto taste
- Fresh dillsmall bunch
- Paprika1 tsp

Dice the pre-cooked lamb liver into bite-sized pieces. Finely chop the onion, mince the garlic, and dice the bell pepper.

Heat olive oil in a large skillet over medium-high heat. Sauté the onion until softened, about 5 minutes.

Add the garlic and bell pepper, cook for another 3 minutes.

Add the diced liver and rice to the skillet. Stir well and cook for 2 minutes, toasting the rice slightly.

Pour in the vegetable broth. Add paprika, salt, and pepper. Bring to a simmer.

Cover the skillet, reduce heat to low, and cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Stir occasionally.

Stir in most of the fresh dill. Garnish with the remaining dill before serving directly from the skillet.
