
Traditional Baked Carp (Шаран на фурна)

A classic Bulgarian dish featuring a whole carp baked with onions, tomatoes, and herbs, often with a side of roasted vegetables. The fish is tender and flavorful, infused with the aromas of the vegetables and spices.

- Yellow onions2 large
- Tomatoes3 medium
- Garlic4 cloves
- White wine100 ml
- Olive oil4 tbsp
- Fresh dill1 bunch
- Fresh parsley1 bunch
- Lemon1

Preheat oven to 200°C (400°F).

Clean and scale the carp. Make several diagonal slits on both sides of the fish.

Slice the onions thinly and chop the garlic.

Cut the tomatoes into wedges.

Finely chop half of the dill and parsley.

Rub the carp inside and out with salt and pepper. Stuff the cavity with some dill, parsley, garlic, and lemon slices.

In a baking dish, arrange the sliced onions and tomato wedges around the fish. Drizzle everything with olive oil and white wine.

Place the carp on top of the vegetables.

Bake for 40-50 minutes, or until the fish is cooked through and flakes easily with a fork. Baste occasionally with the pan juices.

Garnish with fresh dill and parsley before serving.
