- Whole turbot1.5 kg
- Potatoes500 g
- Onion2 medium
- Bell pepper (red)1 large
- Bell pepper (green)1 large
- Garlic4 cloves
- White wine100 ml
- Olive oil100 ml
- Fresh dill1 bunch
- Fresh parsley1 bunch
- Saltto taste
- Black pepperto taste
- Water100 ml

Preheat oven to 200°C (400°F).

Clean the turbot thoroughly. Make several deep incisions on both sides of the fish.

Peel and cut potatoes into thick slices. Slice onions and bell peppers. Mince garlic.

In a large baking dish, toss the potatoes, onions, and bell peppers with half of the olive oil, minced garlic, chopped dill and parsley, salt, and pepper.

Place the prepared turbot on top of the vegetables. Drizzle the remaining olive oil over the fish and season with salt and pepper. Stuff some herb sprigs into the incisions.

Pour the white wine and water around the vegetables.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for another 20-30 minutes, or until the fish is cooked through and the skin is golden and crispy.

Garnish with fresh dill sprigs before serving.
