- Dried white beans (e.g., navy or cannellini)500g
- Smoked pork belly or bacon200g
- Onion1 large
- Garlic3 cloves
- Tomato paste3 tbsp
- Molasses or brown sugar2 tbsp
- Worcestershire sauce1 tbsp
- Mustard (e.g., Dijon or yellow)1 tsp
- Bay leaf1
- Saltto taste

Soak beans overnight in plenty of water. Drain and rinse.

Boil beans in fresh water until tender but not mushy (about 1-1.5 hours). Drain, reserving some cooking liquid.

Dice pork belly and cook in a large oven-safe pot or Dutch oven until crisp. Remove pork, leaving rendered fat.

Sauté chopped onion and minced garlic in the pork fat until softened.

Stir in tomato paste, molasses/brown sugar, Worcestershire sauce, and mustard. Cook for 1-2 minutes.

Add the cooked beans, cooked pork belly, bay leaf, salt, and pepper to the pot. Stir to combine.

Add enough reserved bean liquid or water to just cover the beans. Bring to a simmer.

Cover the pot and bake in a preheated oven at 160°C (325°F) for 2-3 hours, or until beans are very tender and sauce has thickened.

Remove bay leaf before serving. Adjust seasoning if needed.
