- Smoked sausage (e.g., Kielbasa or a firm Bulgarian sausage)150g
- Onion1 large
- Carrots1 medium
- Bell pepper (red)1 large

- Smoked paprika1 tsp
- Mint (dried)1/2 tsp
- Savory (dried)1/2 tsp
- Bay leaf1
- Vegetable oil2 tbsp

Soak the dried beans overnight. Drain and rinse.

Place beans in a pot, cover with water, boil for 10 minutes, drain and rinse.

Return beans to pot, add fresh water, bay leaf. Simmer until tender (about 1-1.5 hours).

Dice the smoked sausage. Finely chop onion, carrot, and bell pepper. Mince garlic.

Heat oil in a pan. Sauté sausage until lightly browned. Remove sausage and set aside.

In the same pan, sauté onion until softened, then add carrot and bell pepper. Cook for 5-7 minutes.

Add garlic, tomato paste, and smoked paprika. Cook for 1-2 minutes.

Add the sautéed vegetables and tomato mixture to the pot with the cooked beans. Stir in the reserved sausage, dried mint, and savory.

Season with salt and black pepper. Simmer for 20-30 minutes. Adjust seasoning.
