
Traditional Kartofena Yahnia (Ukrainian Potato Stew)

A hearty and comforting classic Ukrainian potato stew, slow-cooked with tender chunks of potato, carrots, onions, and often enriched with smoked paprika and herbs. This is the quintessential version of Kartofena Yahnia.

- Potatoes1 kg
- Onions2 large
- Carrots2 medium
- Garlic3 cloves
- Vegetable oil3 tbsp
- Smoked paprika1 tsp
- Tomato paste2 tbsp
- Bay leaf1
- Fresh dill1/4 cup, chopped
- Saltto taste
- Black pepperto taste

Peel and chop potatoes into large cubes. Chop onions and carrots. Mince garlic.

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add onions and carrots and sauté until softened, about 8-10 minutes.

Add minced garlic and smoked paprika, cook for 1 minute until fragrant.

Stir in tomato paste and cook for another minute.

Add the chopped potatoes, bay leaf, salt, and pepper. Pour in enough water to cover the ingredients.

Bring to a boil, then reduce heat, cover, and simmer for 40-50 minutes, or until potatoes are tender and the stew has thickened slightly.

Remove bay leaf. Stir in fresh dill just before serving.
