For the crepes: Whisk together flour, sugar, and salt. In a separate bowl, whisk milk, eggs, and melted butter. Gradually add wet ingredients to dry ingredients, whisking until smooth. Let batter rest for 30 minutes.

Heat a lightly oiled non-stick skillet over medium heat. Pour about 1/4 cup of batter for each crepe, swirling to coat the bottom. Cook for 1-2 minutes per side until golden brown. Repeat with remaining batter.

For the filling: In a bowl, mash farmer's cheese until smooth. Stir in sour cream, powdered sugar, vanilla extract, and lemon zest until well combined.

Assemble the cake: Spread a thin layer of cheese filling over each crepe. Stack the filled crepes one on top of another.

Chill the cake in the refrigerator for at least 2 hours to allow the flavors to meld and the cake to set.
