- Rice150g
- Smoked pork belly150g
- Onion1 small
- Garlic1 clove
- Vegetable oil1 tbsp
- Fresh mint1/4 cup, chopped
- Saltto taste
- Black pepperto taste

Wash and finely chop the sorrel leaves.

Wash the rice.

Cut the smoked pork belly into small cubes. Fry in a dry pan until crispy and golden. Remove pork from pan and set aside, leaving rendered fat in the pan.

Finely chop the onion and mince the garlic. Sauté the onion in the pork fat (or add vegetable oil if needed) until softened. Add garlic and sauté for another minute.

Add the chopped sorrel to the pan and cook until wilted, about 5 minutes.

Add the washed rice and enough water to cover. Bring to a boil, then reduce heat, cover, and simmer until rice is cooked, about 15-20 minutes. Add more water if necessary.

Stir in the crispy smoked pork pieces and the chopped fresh mint. Cook for another 2 minutes to meld flavors.

Season with salt and black pepper to taste. Be mindful of the saltiness from the pork.
