- Salt1 teaspoon
- Sirene cheese (Bulgarian white brine cheese)200g
- Butter100g
- Fresh parsley (optional garnish)2 tablespoons, chopped

In a large pot, bring the water and salt to a boil.

Gradually whisk in the cornmeal, ensuring no lumps form.

Reduce heat to low and simmer, stirring frequently, until the kachamak thickens to your desired consistency (about 20-25 minutes).

Remove from heat. Crumble in most of the sirene cheese and stir until partially melted and incorporated.

Pour the kachamak into serving bowls.

Top each serving with a generous knob of butter and the remaining crumbled sirene cheese.
