Preheat oven to 180°C (350°F).

Wash zucchini, cut in half lengthwise, and scoop out the seeds and some flesh. Chop the scooped-out flesh finely.

Finely chop the onion. Sauté the onion in 1 tbsp of vegetable oil until softened. Add the chopped zucchini flesh and cook for 5 minutes.

Add the ground meat to the pan. Cook until browned. Drain excess fat.

Remove from heat. Stir in the crumbled sirene cheese, egg, tomato paste, remaining 1 tbsp oil, salt, and pepper. Mix well.

Stuff the hollowed-out zucchini halves with the meat and cheese mixture.

Arrange the stuffed zucchini in a baking dish. Pour the water into the dish.

Cover with foil and bake for 40 minutes.

Remove foil and bake for another 15-20 minutes, or until the zucchini is tender and the top is lightly golden.

Garnish with fresh mint or parsley before serving.
