- Garlic3 cloves, minced
- Olive oil1/4 cup
- Dried oregano1 tbsp
- Fresh parsley2 tbsp, chopped

Preheat oven to 200°C (400°F).

Wash zucchini and slice into thick rounds (about 1.5-2 cm).

In a bowl, combine chopped tomatoes, minced garlic, olive oil, dried oregano, salt, and pepper.

Arrange zucchini slices in a single layer in a baking dish.

Spoon the tomato mixture evenly over the zucchini slices.

Add 1/4 cup of water to the bottom of the baking dish.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for another 10-15 minutes, or until zucchini is tender and the sauce has thickened slightly.
