- Penne or rigatoni pasta400g
- Smoked sausage (e.g., kielbasa)300g
- Red bell pepper1
- Zucchini1
- Onion1 medium
- Garlic2 cloves
- Heavy cream250ml
- Milk250ml
- Gruyere or Swiss cheese, grated200g
- Butter2 tbsp
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste
- Fresh parsley, chopped (for garnish)2 tbsp

Cook pasta according to package directions until al dente. Drain and set aside.

Slice the smoked sausage. Dice the bell pepper, zucchini, and onion. Mince the garlic.

In a large skillet, heat olive oil and sauté the onion until softened. Add the sausage and cook until lightly browned.

Add the diced bell pepper and zucchini to the skillet. Cook for 5-7 minutes until vegetables are tender-crisp.

Stir in the minced garlic and cook for 1 minute until fragrant.

In a saucepan, melt butter. Whisk in flour and cook for 1 minute. Gradually whisk in cream and milk until smooth. Bring to a simmer and cook until thickened.

Remove sauce from heat. Stir in 150g of the grated cheese until melted. Season with salt and pepper.

In a greased baking dish, combine the cooked pasta, sausage and vegetable mixture, and the cheese sauce. Stir well to combine.

Sprinkle the remaining cheese over the top. Bake in a preheated oven at 180°C (350°F) for 25-30 minutes, until golden and bubbly.

Garnish with fresh parsley before serving.
