
Traditional Purlenki with Butter and Garlic

Classic Bulgarian Purlenki, a soft, fluffy flatbread brushed generously with melted butter infused with fresh garlic and parsley. Perfect as a side or appetizer.

- All-purpose flour500g
- Active dry yeast7g
- Warm water300ml
- Sugar1 tsp
- Salt1 tsp
- Unsalted butter100g
- Fresh garlic4 cloves
- Fresh parsley2 tbsp, chopped

In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes until foamy.

In a large bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture.

Mix until a shaggy dough forms. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1 hour, or until doubled in size.

Punch down the dough and divide it into 8 equal portions. Shape each portion into a flat, round disc (about 1/2 inch thick).

Place the discs on a baking sheet lined with parchment paper. Let them rest for another 15 minutes.

Preheat oven to 200°C (400°F).

Bake for 10-12 minutes, or until golden brown and puffed.

While the purlenki are baking, melt the butter in a small saucepan. Add minced garlic and chopped parsley, and simmer for 1-2 minutes until fragrant.

Brush the warm purlenki generously with the garlic butter mixture immediately after removing them from the oven.
