- Canned Chickpeas2 (15-ounce) cans, drained and rinsed
- Onion1/4 cup, finely chopped
- Garlic2 cloves, minced
- Fresh Parsley1/4 cup, chopped
- Cumin1 tsp
- Coriander1/2 tsp
- All-Purpose Flour2 tbsp
- Saltto taste
- Black Pepperto taste
- Olive Oil2 tbsp

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a food processor, pulse canned chickpeas until mostly mashed but still slightly chunky.

Add chopped onion, garlic, parsley, cumin, coriander, flour, salt, and pepper. Process until combined.

Form the mixture into small patties or balls.

Place falafel on the prepared baking sheet. Drizzle with olive oil.

Bake for 20-25 minutes, flipping halfway through, until golden brown and firm.
